Ingredients

  • 2 c. mixed beans (13 different kinds)
  • 2 qt. water
  • ham or ham hock
  • 1 large onion, chopped
  • 1 large can tomatoes, chopped
  • 1 pod red pepper OR 1 tsp. chili powder OR 1 small can chopped green chiles
  • juice of one lemon
  • salt and pepper to taste

Directions

    Wash beans, cover with water and soak overnight.

    Add the 2 quarts water and ham or ham hock.
  3. 3
    Bring to a boil.
  4. 4
    Simmer 2 1/2 to 3 hours.
  5. 5
    Add all other ingredients and simmer another 30 minutes.
