Ingredients
- 1 lb. pinto beans
- 1/2 lb. bacon
- 1 green pepper, chopped
- 2 medium onions, chopped
- 1 c. cilantro leaves, chopped
- 1 jalapeno pepper, diced
- 2 cloves garlic, crushed
- 6 to 8 c. water or broth
Directions

1Rinse beans.

2Place in a saucepan and cover with water.

3Bring to a boil.

4Turn off heat and let beans soak overnight or for several hours.

5In a large skillet, fry bacon until crisp.

6Drain on paper towels.

7Add green pepper, onions, cilantro, jalapeno and garlic to bacon drippings.

8Saute until tender.

9Add to beans along with crumbled bacon and water.

10Cook until beans are tender. Makes 6 to 8 servings.
