Bean Soup

Ingredients

  • 1 lb. pinto beans
  • 1/2 lb. bacon
  • 1 green pepper, chopped
  • 2 medium onions, chopped
  • 1 c. cilantro leaves, chopped
  • 1 jalapeno pepper, diced
  • 2 cloves garlic, crushed
  • 6 to 8 c. water or broth

    Rinse beans.

    Place in a saucepan and cover with water.

    Bring to a boil.

    Turn off heat and let beans soak overnight or for several hours.

    In a large skillet, fry bacon until crisp.

    Drain on paper towels.

    Add green pepper, onions, cilantro, jalapeno and garlic to bacon drippings.

    Saute until tender.

    Add to beans along with crumbled bacon and water.

    Cook until beans are tender. Makes 6 to 8 servings.
