Bean Soup

Ingredients

  • 1 lb. dry beans
  • 2 pt. cold water
  • 1 ham bone
  • 1 bay leaf
  • 1/2 tsp. salt
  • pepper to taste
  • 1 medium sliced onion

Directions

    Rinse beans and cold water.

    Bring to boil and simmer two minutes.

    Remove from heat and cover.

    Let stand one hour or add water and let stand overnight.

    Drain.

    Add ham bone, bay leaf, salt and pepper.

    Cover and simmer 3 1/2 hours.

    Add onion the last 1/2 hour.

    Remove ham from bone.

    Mash beans slightly with potato masher and add ham to soup.
