- 1 lb. Great Northern beans (preferably Goya)
- 8 c. water
- 1 Tbsp. baking soda
- 1 Tbsp. paprika
- 2 onions, finely chopped
- 2 carrots, chopped
- 3 celery stalks, chopped
- 1/4 c. oil
- 8 oz. tomato sauce
- parsley
- salt and pepper
Directions

1Cover beans with water and baking soda overnight.

2Drain. Place beans in pot with water. Add paprika, onions, carrots and celery. Bring to a boil.

3Add 1/4 cup oil.

4Let it boil for 5 minutes.

5Cover and simmer for 2 hours or until tender. Add tomato sauce and stir.

6When beans are tender (not mushy), add salt, pepper and parsley. Tastes better the second day.
