*Bean Soup

  • 1 lb. Great Northern beans (preferably Goya)
  • 8 c. water
  • 1 Tbsp. baking soda
  • 1 Tbsp. paprika
  • 2 onions, finely chopped
  • 2 carrots, chopped
  • 3 celery stalks, chopped
  • 1/4 c. oil
  • 8 oz. tomato sauce
  • parsley
  • salt and pepper

Directions

    Cover beans with water and baking soda overnight.

    Drain. Place beans in pot with water. Add paprika, onions, carrots and celery. Bring to a boil.

    Add 1/4 cup oil.

    Let it boil for 5 minutes.

    Cover and simmer for 2 hours or until tender. Add tomato sauce and stir.

    When beans are tender (not mushy), add salt, pepper and parsley. Tastes better the second day.
