Ingredients

  • 1 1/2 c. mixed beans
  • 1 Tbsp. salt
  • ham bone
  • 1 lb. ham pieces
  • 1 clove garlic, minced
  • 1 (28 oz.) can tomatoes (including juice), chopped
  • 1 whole onion, chopped
  • juice of 1 lemon
  • 1/2 c. chopped celery
  • 2 Tbsp. Worcestershire sauce
  • 1 Tbsp. basil
  • 2 carrots, chopped
  • salt and pepper to taste

Directions

    Wash the bean mixture well, then cover with water.

    Add salt. Soak at least 3 hours or overnight.

    Put beans (after draining) in 2 quarts water and add remaining ingredients.

    Cook all day or at least 4 hours.

    Remove ham bone and excess fat.
