  • 1 c. navy pea beans
  • 2 carrots
  • 2 onions
  • 2 potatoes
  • 1 1/2 c. cooked ham
  • 2 qt. boiling water
  • pepper
  • 1 tsp. salt
  • 1 bay leaf
  • 1 clove garlic
  • 2 Tbsp. butter
  • 1 Tbsp. flour
  • paprika

Directions

    Wash and soak beans in cold water overnight.

    Drain beans; add hot water and sliced vegetables.

    Add meat and spices.

    Cover; simmer slowly 1 1/2 hours.

    Melt butter; stir in 1 tablespoon flour and several dashes of paprika.

    Add some broth from soup to make paste.

    Stir this back into soup and cook a few more minutes. Makes 8 servings.
