  • 1 cup kidney bean
  • 1 cup black-eyed peas
  • 1 cup lima beans
  • 1 cup chickpeas
  • 1 cup cannellini beans
  • 1 cup edamame
  • 1 jalapeno pepper, diced
  • 12 medium onion, sliced
  • 2 tablespoons cilantro
  • 1 garlic clove
  • 12 cup extra virgin olive oil
  • 14 cup cider vinegar
  • 1 small lime, juice of
  • salt
  • pepper

Directions

    Add all beans, pepper, onion, cilantro and crushed garlic into a large bowl.

    Pour vinegar and lime juice in a separate bowl.

    Whisk in the olive oil.
