- 1 cup black-eyed peas
- 1 cup lima beans
- 1 cup chickpeas
- 1 cup cannellini beans
- 1 cup edamame
- 1 jalapeno pepper, diced
- 12 medium onion, sliced
- 2 tablespoons cilantro
- 1 garlic clove
- 12 cup extra virgin olive oil
- 14 cup cider vinegar
- 1 small lime, juice of
- salt
- pepper
Directions

1Add all beans, pepper, onion, cilantro and crushed garlic into a large bowl.
