  • 1 lb dried beans
  • 1 onion, 1/2 chopped
  • 1 carrot chopped
  • 1-2 stalks celery chopped
  • 6 garlic cloves, 4 crushed, 2 chopped
  • bouquet garni with parsley, thyme, bay leaf
  • olive oil
  • 16 cups chopped greens
  • tomato sauce

    1. cook beans for 1 hour in water to cover with bouquet garni and 1/2 onion and crushed garlic. After 1 hour remove onion, garlic and bouquet garni

    2. Meanwhile heat olive oil over medium heat in a separate skillet and cook onion, carrot, celery and garlic, then add greens. Stir mixture into beans, and add tomato paste and 3 teaspoons salt. Cook for 1 hour more until beans are very cooked, and sauce is thick.
