- 15 lb. beaver
- 5 lb. salt
- 3 lb. onions, sliced
- plum jelly
Directions

1Clean beaver and be sure curnels under legs are out; take off all fat.

2Cut in pieces; wash good.

3Put in a pan a layer of beaver, a layer of onions and sprinkle heavy with salt.

4Continue this way until pan is full.

5Let stand overnight.

6Rinse thoroughly.

7Put a layer of meat and brush with plum jelly. Continue until roaster is full.

8Bake at 350° for 4 to 5 hours or until done.
