- fresh parsley
- pinch of nutmeg
- 1 Tbsp. minced onion
- 6 c. hot milk
Directions

1Melt butter.

2Add onion and simmer a few minutes.

3Stir in flour and cook over low heat, stirring constantly, until flour begins to golden.

4Add hot milk, 2 cups at a time, stirring constantly.

5Add remaining ingredients and cook over low heat, stirring frequently, for about 40 minutes.

6Strain through a fine sieve before using.
