- 1 lb. lean ground beef
- 1 medium chopped onion
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 (14 1/2 oz.) can Italian seasoned, diced tomatoes, drained
- 1/4 c. ketchup
- 1/2 tsp. sugar
- 4 c. (1/2 lb. pkg.) cole slaw mix
- 2 c. hot, cooked rice
Directions

1In a large, nonstick skillet, brown ground beef and onion over medium heat for 8 to 10 minutes or until beef is no longer pink, breaking meat into 3/4-inch pieces.

2Pour off drippings.

3Season with salt and pepper.

4Stir in tomatoes, ketchup and sugar.

5Add cole slaw, mixing well, and cook for 5 minutes or until cole slaw is crisp-tender, stirring occasionally.
