Beef Barley Soup

- 1/2 c. minced onion
- 5 Tbsp. butter
- 1 c. medium pearl barley
- 3 cans boiling beef consomme
- 1/2 lb. mushrooms, sliced
- 1 tsp. salt
- 1/4 tsp. pepper
- garlic salt to taste
Directions

1Saute onion in 3 tablespoons butter until soft but not brown. Stir in barley; cook over medium heat for 3 to 5 minutes, or until barley begins to brown.

2Stir constantly.

3Add hot consomme very slowly; barley will sizzle.

4Cook over lowest heat until barley has absorbed liquid (45 minutes to 1 hour).

5Saute mushrooms.

6Put in barley and season.

7Cook a few minutes together.
