Beef Bourguignon

Ingredients
- 1 1/2 lb. beef cubes (preferably sirloin tips)
- 2 slices bacon
- 1 can condensed golden mushroom soup
- 1/2 c. red wine
- 1 large clove garlic, minced
- 1 bay leaf
- 2 Tbsp. parsley, chopped
- 1 1/2 c. small whole white onions (frozen)
- salt and pepper to taste
Directions

1In a large heavy pot, cook bacon until crisp and remove.

2In bacon drippings, brown beef cubes.

3Add soup, wine, garlic, bay leaf, parsley and bacon. Season to taste.

4Cover and cook over low heat for 1 hour. Stir occasionally.

5Add onions and cook 1 hour longer or until tender. Remove bay leaf.

6Serves 4 to 6.

7Serve with rice or noodles.
