Beef Bourguignon

Ingredients

  • 1 1/2 lb. beef cubes (preferably sirloin tips)
  • 2 slices bacon
  • 1 can condensed golden mushroom soup
  • 1/2 c. red wine
  • 1 large clove garlic, minced
  • 1 bay leaf
  • 2 Tbsp. parsley, chopped
  • 1 1/2 c. small whole white onions (frozen)
  • salt and pepper to taste

Directions

    In a large heavy pot, cook bacon until crisp and remove.

    In bacon drippings, brown beef cubes.

    Add soup, wine, garlic, bay leaf, parsley and bacon. Season to taste.

    Cover and cook over low heat for 1 hour. Stir occasionally.

    Add onions and cook 1 hour longer or until tender. Remove bay leaf.

    Serves 4 to 6.

    Serve with rice or noodles.
