Beef Burgundy

Ingredients

  • 2 1/2 lb. beef round steak (1/4-inch thick)
  • 1/4 c. flour
  • 4 Tbsp. butter or margarine
  • 1/2 c. chopped onion
  • 1 Tbsp. finely snipped parsley
  • 1 large bay leaf
  • 1 tsp. salt
  • dash of pepper
  • 6 oz. can whole mushrooms, drained
  • 1 c. Burgundy
  • 3/4 c. water

Directions

    Cut steak into bite-size cubes.

    Shake with the flour to coat, being sure all flour is used.

    Melt butter or margarine in skillet.

    Brown steak pieces on all sides.

    Remove from heat.

    Add onion, parsley, bay leaf, salt and pepper.

    Stir in mushrooms, Burgundy and water.

    Heat mixture to boiling.

    Reduce heat and simmer, covered, for about 1 hour, or until meat is tender. Remove bay leaf.
