Ingredients

  • 1 (4 lb.) pot roast
  • 3 Tbsp. butter
  • 2 whole cloves
  • bouquet garni
  • 2 Tbsp. chopped parsley
  • 1 c. red Burgundy
  • 2 c. beef broth
  • 1/2 lb. mushrooms
  • 12 small white onions
  • 1/2 tsp. sugar
  • salt and pepper

Directions

    Sear roast quickly in butter.

    Simmer with cloves, bouquet garni, garlic and parsley.

    Cook roast slowly in wine and stock for 4 to 5 hours.

    Saute mushrooms separately.

    Saute onions in additional butter, sugar, salt and pepper.

    Slice roast; garnish with mushrooms and onions.

    Strain sauce and serve with roast.
