- 1 (4 lb.) pot roast
- 3 Tbsp. butter
- 2 whole cloves
- bouquet garni
- 2 Tbsp. chopped parsley
- 1 c. red Burgundy
- 2 c. beef broth
- 1/2 lb. mushrooms
- 12 small white onions
- 1/2 tsp. sugar
- salt and pepper
Directions

1Sear roast quickly in butter.

2Simmer with cloves, bouquet garni, garlic and parsley.

3Cook roast slowly in wine and stock for 4 to 5 hours.

4Saute mushrooms separately.

5Saute onions in additional butter, sugar, salt and pepper.

6Slice roast; garnish with mushrooms and onions.

7Strain sauce and serve with roast.
