  • 1 tbsp olive oil
  • 1 None onion, finely chopped
  • 1 clove garlic, crushed
  • 1 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1 lb ground beef
  • 1 can (15 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 4 None flour tortillas (8 inches)
  • 3/4 cup coarsely grated Cheddar cheese
  • 1 tsp hot paprika
  • 3/4 cup sour cream
  • 1/2 cup fresh cilantro leaves
  • None None Guacamole, to serve

Directions

    Heat the oil in a medium skillet on high heat. Cook the onion, garlic, cumin and cayenne pepper, stirring, for about 3 mins or until the onion softens. Add the beef and cook, stirring, until browned. Stir in the tomatoes, 1/2 cup water and beans. Reduce heat to low; simmer, uncovered, for about 15 mins or until the mixture thickens. Remove from the heat and season to taste.

    Preheat the oven to 400°F. Divide the warm beef filling among the tortillas. Roll to enclose the filling; secure with toothpicks.

    Place the filled tortillas on a greased baking pan. Sprinkle with cheese and paprika.

    Bake for about 10 mins or until heated through. Remove the toothpicks. Serve the burritos topped with sour cream, cilantro and guacamole.
