Beef Casserole

Ingredients

  • 1 large onion
  • 3 stalks celery
  • 1 green pepper
  • 2 c. pot roast or 1 lb. ground beef
  • 1 (3 oz.) can chow mein noodles
  • 1/2 c. water
  • 1/2 tsp. salt
  • dash of pepper
  • 2 Tbsp. butter
  • 1 can mushroom soup

Directions

    Start oven at 325°.

    Cut onion, celery and green pepper coarsely.
  3. 3
    Chop leftover beef in small cubes.

    Cook beef in 1 tablespoon butter for several minutes, until brown and transfer to a medium size casserole.

    Put remaining butter in pan; toss in chopped vegetables and cook until limp.

    Stir in mushroom soup, water, salt and pepper.

    Mix with the beef.

    Cover and bake 30 minutes.

    (Remove cover and sprinkle surface with Chinese noodles and bake 10 minutes longer.)
