Beef Casserole

- 1 large onion
- 3 stalks celery
- 1 green pepper
- 2 c. pot roast or 1 lb. ground beef
- 1 (3 oz.) can chow mein noodles
- 1/2 c. water
- 1/2 tsp. salt
- dash of pepper
- 2 Tbsp. butter
- 1 can mushroom soup
Directions

1Start oven at 325°.

2Cut onion, celery and green pepper coarsely.

3Chop leftover beef in small cubes.

4Cook beef in 1 tablespoon butter for several minutes, until brown and transfer to a medium size casserole.

5Put remaining butter in pan; toss in chopped vegetables and cook until limp.

6Stir in mushroom soup, water, salt and pepper.

7Mix with the beef.

8Cover and bake 30 minutes.

9(Remove cover and sprinkle surface with Chinese noodles and bake 10 minutes longer.)
