Beef Casserole

Ingredients

  • 1 pkg. taco seasoning
  • 1 1/2 lb. ground beef
  • 1/2 c. bell pepper or to taste
  • 1/2 c. onion or to taste
  • 1 can whole kernel corn
  • 1 can tomato sauce
  • 1 can onion rings, split
  • grated cheese
  • 5 lb. ground meat (about 1/3 each: beef, veal and pork (or use 5 lb. fresh ground turkey breast for reduced fat
  • 1 c. bread crumbs
  • 3 eggs or equivalent in cholesterol-free egg substitute
  • 1/2 c. ketchup (catsup?)
  • 1 1/2 c. Bloody Mary Mix (your preference; I like Snap-E-Tom)
  • 4 bay leaves, roughly crumbled
  • 2 Tbsp. thyme, crumbled
  • 1/2 c. finely chopped parsley
  • 2 onions, minced (optional)
  • salt and freshly cooked pepper
  • uncooked bacon strips (can use turkey bacon for low-fat)

Directions

    Preheat oven to 325°.

    Mix all ingredients, except bacon, and form into two loaves.

    (One can be frozen and served later.)

    Place in tureens (if you have them, it makes a nice presentation) or 9-inch loaf pans.

    Lay bacon strips on top to cover and bake for 1 1/4 hours.

    Drain any accumulated fat. (There will be very little if you use the turkey variations.)

    If serving cold, remove bacon and invert loaf; some jelly glaze will appear on the top.
