Beef Casserole With Vegetables

  • 1 pound ground beef
  • 1 onion chopped
  • 14 ounces tomatoes
  • 1 tablespoon worcestershire sauce
  • 1 pound carrots chopped
  • 1 1/2 pounds potatoes peeled and chopped
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 18 ounces frozen creamed spinach thawed
  • 2 ounces cheddar cheese grated

Directions

    Cook the beef in a frying pan with no oil 5 mins. Add onion and cook 5 more mins. Add tomatoes and Worcestershire sauce and season. Bring to a boil then cover and simmer 20 mins.

    Cook the carrots and potatoes in boiling salted water 10-15 mins until tender. Drain. Mash and season carrots. In a separate bowl, mash potatoes with the butter and milk and season.

    Preheat oven to 400°F. Layer beef, carrot, spinach and potatoes in a deep ovenproof dish. Sprinkle with cheese and bake 25-30 mins until golden. Serve hot.
