- 1 medium eggplant, pared and cut into 1/4-inch slices
- 1 or 2 Tbsp. vegetable oil
- 1 large onion
- 1 medium tomato
- shredded or sliced Cheddar cheese
- 3 eggs
Directions

1Prepare eggplant by paring and cutting to 1/4-inch slices. Beat 3 egg whites until well stiff; add yolks.

2Dip eggplant and fry in oil until brown.

3Place in layers in a 9 x 13-inch pan, alternating eggplant, tomato, onion and cheese.

4Repeat 2 to 3 times.

5Bake 1 hour at 350°.
