Beef Enchiladas

- 1 1/2 c. cooked shredded beef
- 1 1/2 c. shredded sharp Cheddar cheese
- 1/2 c. chopped onion
- 1 (10 3/4 oz.) can condensed cream of mushroom soup
- 1 (10 oz.) can enchilada sauce
- 12 corn tortillas
Directions

1Preheat oven to 350°.

2Combine beef, 1/2 cup cheese and onions; set aside.

3Combine soups and enchilada sauce.

4Dip tortillas in hot oil to soften a few seconds on each side.

5Top each tortilla with one heaping tablespoonful of meat mixture; roll up.

6Place seam side down in 13 x 9 x 2-inch baking dish.

7Pour sauce over top and top with remaining cheese.

8Bake at 350° for 25 to 30 minutes. Serves 6.
