Beef Enchiladas

  • 2 lb. ground beef
  • 1 (10 oz.) can mild Old El Paso enchilada sauce
  • 1 (10 oz.) can mild Old El Paso green chili enchilada sauce
  • 1 (4 oz.) can tomato sauce
  • 6 oz. Monterey Jack cheese, shredded
  • 6 oz. mild Cheddar cheese, shredded
  • pinch of salt and pepper
  • 1/4 tsp. garlic powder
  • 8 to 10 flour tortillas

Directions

    Brown ground beef in skillet, stirring until crumbly; drain. Return to skillet; add sauces, garlic and salt and pepper to taste.

    Simmer for 20 to 25 minutes on low heat.

    Spoon onto flour tortillas; add cheese.

    Roll up to enclose filling.

    Arrange seam-side down in a greased 8 x 10-inch baking dish.

    Spoon rest of beef mixture on top of tortillas.

    Add cheese on top and bake 10 to 12 minutes.
