Beef Enchiladas

  • 1 lb. ground beef
  • 1 can tomato soup
  • 1 can cream of mushroom soup
  • 1 can mild enchilada sauce
  • 1/2 c. onion, chopped
  • 1 c. Cheddar cheese, shredded
  • 1 c. Mozzarella cheese, shredded
  • 1 pkg. corn tortillas
  • 1 c. cooking oil

Directions

    Brown meat with 1/4 cup onions.

    Drain and return to skillet. Combine soups, enchilada sauce, and 1/2 can water in separate saucepan.

    Heat over low fire.

    Heat oil until a drop of water sizzles when dropped into the pot.

    Grease well a 9 x 13-inch pan. Heat tortillas, one at a time, in oil until soft, usually about 3 seconds.

    Move tortilla from oil to pan; spoon about a tablespoon and a half of beef mixture into shell and roll.

    Repeat this process until pan is full.

    Put remaining onions on top, then 1/2 cup of each cheese.

    Cover with sauce mixture.

    Add remaining cheeses and bake at 350° for 30 minutes or until bubbling.
