Beef Enchiladas

- 1 lb. ground beef
- 1 large onion
- 2 Tbsp. chili powder
- salt and pepper to taste
- 2 c. grated Cheddar or Monterey Jack cheese
- 2 c. red chili sauce (see recipe)
- 16 to 18 tortillas
- 1 c. cooking oil
Directions

1Cook ground beef in skillet, stirring constantly to keep separated.

2Add onion; cook until transparent.

3Stir in 2 tablespoons chili powder, salt and pepper to taste.

4Add grated cheese.

5Cover and set aside.

6Dip each tortilla in hot cooking oil for several seconds on each side, using tongs or a spatula. Do not brown or cook hard.

7Place tortillas in sauce mixture, 4 to 5 at a time.

8Remove 1 tortilla at a time; place in a large casserole.

9Fill with 2 tablespoons beef mixture; roll tightly. Repeat until all are prepared; stack if necessary, to get all in casserole.
