Beef Gumbo Soup

  • 4 lb. beef shank
  • 2 Tbsp. oil
  • 2 Tbsp. salt
  • 2 onions, sliced
  • 6 carrots, sliced
  • 2 potatoes, diced
  • 1/2 c. celery, chopped
  • 1 Tbsp. garlic powder
  • 1 (16 oz.) can tomatoes
  • 1 pkg. frozen lima beans
  • 1 (16 oz.) can green beans
  • 1 (16 oz.) can kernel corn
  • 1/4 head cabbage, sliced
  • 1 (16 oz.) can okra, drained
  • 2 qt. water

Directions

    Cut beef in small pieces and brown in oil.

    Add salt and 2 quarts water and onion.

    Simmer for 2 1/2 hours.

    Add carrots, potatoes, celery and garlic powder.

    Cook 30 minutes longer.

    Add tomatoes, beans, lima beans, corn and cabbage.

    Simmer until vegetables are tender.

    Add okra and heat.
