- 2 1/2 tsp. mustard seed
- 2 1/2 tsp. coarse ground black pepper
- 2 1/2 tsp. garlic salt
- 1 tsp. hickory smoked salt
Directions

1Mix together thoroughly the meat, salt cure, mustard seed, garlic salt and smoked salt.

2Refrigerate this in an airtight container.

3Remove it each day for three days and remix, this helps to distribute the cure better.
