- 1 medium eggplant
- 1 c. dry bread crumbs
- 2 c. cooking fat
- 2 medium onions, finely chopped
- 1 (8 oz.) can tomato sauce
- 1/2 tsp. each: oregano, cinnamon and garlic powder
- 1 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/4 tsp. salt
- 1 1/3 c. milk
- 2 eggs, beaten
- 3/4 c. Parmesan cheese, grated
Directions

1Pare eggplant and cut into 1/2-inch pieces.

2Combine bread crumbs and 1/2 teaspoon salt; coat both sides of eggplant with seasoned crumbs, reserving leftover crumbs.

3Brown the eggplant in hot cooking fat, draining on absorbent paper.
