  • 1 lb. ground beef
  • 1 medium eggplant
  • 1 c. dry bread crumbs
  • 2 c. cooking fat
  • 2 medium onions, finely chopped
  • 1 (8 oz.) can tomato sauce
  • 1/2 tsp. each: oregano, cinnamon and garlic powder
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • 1 1/3 c. milk
  • 2 eggs, beaten
  • 3/4 c. Parmesan cheese, grated

    Pare eggplant and cut into 1/2-inch pieces.

    Combine bread crumbs and 1/2 teaspoon salt; coat both sides of eggplant with seasoned crumbs, reserving leftover crumbs.

    Brown the eggplant in hot cooking fat, draining on absorbent paper.
