Beef 'N Beet

- 2 to 3 lb. lean beef roast, cut into small pieces
- 10 to 12 medium sized red beets with greens attached (a good leafy variety, like Hutz Green Leaf is best)
- 1 tsp. selected spices (oregano, basil, rosemary and parsley)
Directions

1Slowly cook beef pieces with desired seasonings (ex: salt, onions, pepper, oregano, rosemary) until about half cooked (30 minutes on medium heat).

2Add the root part of the red beets, washed and cut to pieces, about the size of the meat.

3Cook together with meat until both are soft (about 30 minutes on medium heat).

4Add to the beets and meat.

5The beet greens torn into small pieces.

6Simmer together on medium heat for about 10 minutes.

7Greens will wilt.

8Stir together for a colorful, tasty and healthful meal.
