Beef 'N' Rice Supper

Ingredients

  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1 green pepper, diced
  • 1/2 tsp. salt
  • 1 tsp. oregano
  • 1 can (16 oz.) tomatoes
  • 1 can (13 3/4 oz.) beef broth
  • 3/4 c. regular white rice
  • grated Parmesan cheese

Directions

    Heat large, heavy skillet.

    Add beef and onion and cook, stirring constantly, until beef is browned and onion is tender. Stir in green pepper, salt, oregano, tomatoes, beef broth and rice.

    Heat to boiling.

    Reduce heat; cover and simmer, stirring once or twice, about 25 minutes or until liquid is almost absorbed and rice is tender.

    Remove to serving dish.

    Sprinkle with Parmesan cheese.

    Makes 5 to 6 servings.
