Ingredients

  • 1 lb. boneless beef top sirloin strips (for stir-fry)
  • 1/2 tsp. salt
  • 1/4 tsp. Pepper
  • 4 tsp. canola oil
  • 1 c. thinly sliced onion
  • 1 c. red bell pepper strips
  • 1 tbsp. paprika
  • 2 tsp. minced garlic
  • 1 c. canned fat-free chicken broth
  • 1 c. fat-free sour cream
  • Serve with: hot cooked bow-tie pasta
  • Garnish: chopped parsley

Directions

    Season beef with salt and pepper.

    Heat 2 tsp oil in a large skillet over medium-high heat.

    Add beef in 2 batches and stir-fry each just until browned (don't overcook or meat will be tough).

    Remove to a plate.

    Add remaining 2 tsp oil to drippings in skillet.

    Heat skillet over medium heat; add onion and bell pepper and cook, stirring often, 4 minutes until soft.

    Stir in paprika, garlic and broth; simmer 5 minutes.

    Remove from heat; stir in sour cream, then beef.

    Serve over pasta, if desired.

    Sprinkle with parsley.
