Beef Pot Roast

Ingredients

  • 1 (3 to 4 lb.) beef pot roast
  • 3/4 c. water, beef broth, dry wine, beer or tomato juice
  • 1/2 tsp. thyme, crushed
  • 1/2 tsp. Worcestershire sauce
  • 1 pkg. dry onion soup mix
  • 1 can cream of mushroom soup
  • 2 Tbsp. vinegar
  • 1/2 onion, cut up
  • 1/4 c. flour
  • 2 Tbsp. oil

Directions

    Coat all sides of meat with vinegar.

    Then repeat with flour. In a Dutch oven, heat the oil until hot.

    Brown the meat slowly on all sides.

    Sprinkle with salt and pepper.

    Add chopped onion (sauteed).

    Add water or desired liquid, thyme, Worcestershire sauce, onion soup mix and cream of mushroom soup; stir.

    Cover and bake in a 325° oven for 1 1/2 hours.

    Add desired vegetables; continue baking, covered, 45 minutes or until tender.
