Beef Roll-Ups

Ingredients
- 1/2 c chopped onions
- 2 T butter or margarine
- 1 c finely diced carrots
- 1 c finely diced potatoes
- 1 can mushroom soup
- 2 T chopped parsley
- 1/2 tsp dill (opt)
- 4 cube steaks or 1 1/2 lb round steak, about 1/8 inch thick
- Salt and pepper to taste
- 2 T shortening
- 1 medium size can tomatoes, cut up
- 1/2 glass white wine (opt)
Directions

1In a saucepan, saute onions in butter.

2Add carrots, potatoes, 1/2 can of soup, parsley and 1/4 tsp dill.

3Cook until partially tender.

4Sprinkle meat with salt and pepper.

5If using round steak, cut into 4 or 5 pieces and flatten.

6Place stuffing in center of meat.

7Roll up, tuck in ends and skewer with toothpicks.

8Using a skillet, brown roll-ups on all sides in shortening.

9Remove excess fat.

10Pour in soup, dill, tomatoes and remaining stuffing.

11Simmer about an hour, but stir frequently. Add wine and simmer for 15 minutes more.
