- 5 lb. fatty hamburger
- 5 heaping tsp. Morton Tender-Quick salt
- 2 1/2 tsp. liquid smoke
- 1 crushed clove garlic (optional)
- 2 1/2 tsp. coarse pepper
- 3 tsp. garlic salt
- 2 1/2 tsp. mustard seed
Directions

1Mix ingredients well.

2Cover and refrigerate overnight. Remove 1 time each day for 3 days and knead well for 5 minutes. On fourth day, knead and divide into 6 or 7 balls and then roll into logs.

3Bake in broiler pan for 9 hours at 160°.

4After 4 1/2 hours, turn.

5When done, drain on paper towels; cool.

6Refrigerate or freeze.
