Ingredients
- 4 cube steaks
- 12 cup chopped onion
- 3 carrots, cut into 1/4 strips 3 long
- Dijon mustard
- 2 stalks celery, cut into 1/4 strips 3 long
- 1 (10 ounce) can tomatoes, chopped
- 1 beef bouillon cube
- 1 cup water
- 2 tablespoons cornstarch
- salt
- pepper
- 1 whole bay leaf
- 12 teaspoon dried thyme
- 2 tablespoons oil
Directions

1Coat each steak with dijon mustard then onion.

2Place several strips of celery and carrots in the center.

3Salt and pepper to taste.

4Roll steak around the veggies and secure with string or dental floss.

5Place in a skillet and brown with oil then add the tomatoes and bouillon which has been dissolved in water.

6Cook for 25 minutes over medium heat or until meat is done.

7Mix cornstarch with 1/3 cup water, stir into skillet and turn the burner on high and cook and stir for 2 minutes or until the sauce is thickened.

8Delicious served over rice.

9I also like to double the sauce and add extra veggies to the pot.
