Ingredients

  • 2 lb. beef stew meat, cut in 1 1/2-inch cubes
  • 2 medium onions, cut in eighths
  • 3 celery stalks, cut in 1-inch diagonals
  • 4 medium carrots, cut in half, crosswise and lengthwise
  • 3 c. tomato juice
  • 1/3 c. quick tapioca
  • 1 Tbsp. sugar
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 2 medium potatoes, cut 1/4-inch thick slices

Directions

    Put all ingredients, except potatoes, into a 3-quart casserole.

    Bake, covered, at 300° for 2 1/2 hours.

    Remove bay leaf and stir in potatoes.

    Bake, covered, for additional 1 hour or until meat and vegetables are tender.
