- 2 lb. beef stew meat, cut in 1 1/2-inch cubes
- 2 medium onions, cut in eighths
- 3 celery stalks, cut in 1-inch diagonals
- 4 medium carrots, cut in half, crosswise and lengthwise
- 3 c. tomato juice
- 1/3 c. quick tapioca
- 1 Tbsp. sugar
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 bay leaf
- 2 medium potatoes, cut 1/4-inch thick slices
Directions

1Put all ingredients, except potatoes, into a 3-quart casserole.

2Bake, covered, at 300° for 2 1/2 hours.

3Remove bay leaf and stir in potatoes.

4Bake, covered, for additional 1 hour or until meat and vegetables are tender.

5Yields 8 servings.
