- 2 lb. stew meat
- 1/4 c. cooking oil
- 1 1/2 c. chopped onion
- 1 (1 lb.) can tomatoes
- 3 Tbsp. tapioca
- 1 (10 1/2 oz.) can broth
- 1 clove garlic
- 1 Tbsp. parsley
- 2 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 bay leaf
- 6 carrots
- 3 medium potatoes
- 1/2 c. celery
Directions

1Brown beef on all sides in hot oil.

2Add onion, tomatoes, tapioca, broth, garlic, parsley, salt, pepper and bay leaf.

3Bring to a boil.

4Pour over casserole.

5Cover.

6Bake in a 350° oven for 1 hour and 30 minutes.

7Add vegetables; bake for 1 hour or until vegetables are done.
