  • 2 lb. stew meat
  • 1/4 c. cooking oil
  • 1 1/2 c. chopped onion
  • 1 (1 lb.) can tomatoes
  • 3 Tbsp. tapioca
  • 1 (10 1/2 oz.) can broth
  • 1 clove garlic
  • 1 Tbsp. parsley
  • 2 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 6 carrots
  • 3 medium potatoes
  • 1/2 c. celery

Directions

    Brown beef on all sides in hot oil.

    Add onion, tomatoes, tapioca, broth, garlic, parsley, salt, pepper and bay leaf.

    Bring to a boil.

    Pour over casserole.

    Cover.

    Bake in a 350° oven for 1 hour and 30 minutes.

    Add vegetables; bake for 1 hour or until vegetables are done.
