Ingredients

  • 3 lb beef
  • 1 large onion
  • 1 cloves garlic
  • 2 cups celery
  • 2 cups carrots
  • 1 sweet red pepper
  • 2 14oz cans beef stock
  • 1 can rotel chili and tomatos
  • 1 14 oz can tomatos with basil and oregano
  • 3 T chili sauce
  • 1 T herbes de provence
  • 2-3 14 oz cans hominy

Directions

    Brown meat in olive oil in dutch oven or large pot. Add onion cook until tender
  2. 2
    Add garlic, celery, carrots, sweet pepper and beef stock. Add rotel, tomatos chili sauce and Herbes de Provence.

    One hour before done add homniy.
