  • 3 lb beef chuck, cut into cubes
  • 1.5 teaspoon salt
  • 1 Tablespoon vegetable oil
  • 2 medium onions (~ 2 cups chopped)
  • 3 cloves garlic, minced
  • 3 Tablespoons flour
  • 1.5 cups red wine
  • 1.5 cups chicken stock
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 lb white button mushrooms, quartered
  • 1 cup frozen pearl onions
  • 1/4 cup parsley leaves, minced
