Ingredients

  • butter
  • 3 kilograms beef for stew cut into large cubes, 4-5 cm
  • 1 chopped onion
  • 3 tablespoons flour
  • 8 ounces dry white wine
  • 3 tablespoons balsamic vinegar
  • 1 can tomato paste
  • 1 tablespoon soy sauce
  • 2 garlic cloves with skin
  • thyme sprigs Fresh
  • 1 bay leaf
  • water

Directions

    Heat the oven to 180 degrees Celsius.

    In a cast iron dutch oven, melt 25gr.of butter and saute the meat (on several batches) over high heat.

    Remove from heat and set aside.

    To the same pan, add the onions saute quickly until browned.

    Return the meat in to the pan and sprinkle with the flour, stir to coat the pieces.

    Add wine, vinegar, tomato paste, soy sauce, garlic, thyme and bay leaf.

    Add 2-3 glasses of water so that the liquid completely covers the meat.

    Season with salt and pepper.

    Cook for about 2 hours to 2 hour and a half.

    Before serving remove thyme sprigs and bay leaf.
