  • 5 lb. hamburger
  • 5 rounded tsp. Morton Tender Quick salt
  • 4 1/2 rounded tsp. mustard seed
  • 4 1/2 rounded tsp. black pepper
  • 2 rounded tsp. garlic salt
  • 2 rounded tsp. cracked peppercorns
  • 2 tsp. liquid smoke

    Mix all ingredients well together.

    Cover tightly.

    Place in refrigerator for 3 days.

    Mix well each day.

    On the 4th day, form into 6 rolls and place on rack of broiler pan.

    Bake 8 hours at 150°.

    Turn after 4 hours.

    Cool.

    Wrap in Saran Wrap or foil. Will freeze.
