Beef Stroganoff

Ingredients

  • 1 12 lbs round steaks, trimmed
  • 1 tablespoon vegetable oil
  • 12 ounces crimini mushrooms
  • 1 cup red wine (something you'd drink yourself, NOT cooking wine)
  • 1 cup beef stock
  • salt and pepper
  • 1 cup sour cream (you can use lite, but...don't)
  • cooked egg noodles

    I find that slicing the meat is much easier if you do it while it is partially frozen.

    I slice it VERY thinly in strips.

    Trim as much fat from the meat as possible before slicing.

    Heat the oil in a pan.

    Cook the meat until brown.

    Add mushrooms and cook until all liquid is gone.

    Salt and pepper to taste.

    Add beef broth and wine.

    Simmer on low heat until liquid is reduced by 1/2.

    Add sour cream.

    Pour over noodles.

    Great with a green salad!
