- 1 Tbsp. flour
- 1/2 tsp. salt
- 1 lb. beef sirloin, cut in 1/4-inch strips
- 2 Tbsp. butter
- 1 c. thinly sliced mushrooms
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 2 Tbsp. butter
- 3 Tbsp. flour
- 1 Tbsp. tomato paste
- 1 1/4 c. beef consomme (1 can)
- 1 c. sour cream
- 2 Tbsp. cooking sherry
Directions

1Combine 1 tablespoon flour and the salt and sprinkle over strips of beef.

2Stir to coat beef strips.

3Heat skillet, then add 2 tablespoons butter.

4When melted, add beef strips and brown quickly, turning meat to brown all sides.

5Add the mushroom slices, onion and garlic; cook 3 to 4 minutes or until onion is barely tender.

6Remove meat and mushrooms from skillet.

7Add 2 tablespoons butter to pan drippings; when melted, blend in 3 tablespoons flour. Add tomato paste.

8Slowly pour in cold meat stock.

9Cook, stirring constantly until mixture thickens.

10Return browned meat and mushrooms to skillet.

11Stir in sour cream and sherry.

12Heat briefly.

13Do not allow to boil after sour cream is added.

14Serve with rice or noodles.
