Beef Vegetable Soup

  • 2 lb. beef with bone and meat
  • 3 qt. cold water
  • 2 tsp. salt
  • 1 1/2 c. diced celery
  • 1 1/2 c. diced carrots
  • 2 c. diced potatoes
  • 1 large diced onion
  • 2 c. frozen or mixed vegetables
  • 1 qt. or 2 cans tomatoes (use fresh if in season)
  • 1/8 tsp. pepper
  • 2 Tbsp. chopped parsley
  • 2 c. chopped cabbage

Directions

    Cut meat into small cubes or cook meat until tender before adding vegetables.

    Use large cooker; cover and simmer until tender, about 3 hours.

    Season to taste.

    Add parsley just before serving.
