- 1 lb. beef (flank or top sirloin steak), julienne
- 1/2 tsp. salt
- 1 egg white
- 1 Tbsp. cornstarch
- 2 to 4 c. oil for deep frying
- 3 or 4 onions, sliced
- 1 Tbsp. wine or dry sherry
- 1 Tbsp. sugar
- 4 Tbsp. dark soy sauce
Directions

1Combine beef, salt, egg white and cornstarch.

2Mix well with hands.

3Heat oil in wok.

4Deep-fry beef until it is seared. Drain.

5Reheat 2 tablespoons of oil in wok.

6Add onions.

7Stir-fry until soft and well-browned, about 20 minutes.

8Add beef.
-
9Add sherry, sugar and soy sauce.

10Stir-fry 1 minute, until beef is glazed and brown.

11Serves 4 to 6.
