Ingredients

  • 2 lbs stew meat or 2 lbs roast boneless beef cubes
  • 1 large onion, diced
  • 1 large bell pepper, diced
  • 2 -3 jalapeno peppers, depending how spicy you like it
  • 2 (15 ounce) cans tomatoes, with chili's such as ro-tel
  • 1 (6 ounce) can tomato paste
  • 6 garlic cloves, minced
  • 1 smoked ham hock
  • 1 (12 ounce) canof lager style beer
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 3 (15 ounce) cansof drained and rinsed beans, I used red kidney beans and black beans

    Brown in beef in skillet.

    Once meat is browned, place in Crockpot.

    In the same skillet, saute onions, peppers and garlic until softened.

    Place in crock pot.

    Add to the crock pot, tomato paste, diced tomatoes and spices and beer.

    Place hamhock in the slow cooker.

    Add beans and cook for 8 hours until meat is tender.

    Take out hamhock before serving.
