  • 1 tablespoon olive oil
  • 2 cups sliced mushrooms
  • 1 green bell pepper, cut into thin strips
  • 1 onion, cut into thin wedges
  • 1 large garlic clove, finely chopped
  • 1 teaspoon dried basil or 1 teaspoon dried oregano
  • 14 teaspoon hot pepper flakes
  • 1 12 cups thinly sliced cooked flank steaks (or deli roast beef, cut into strips)
  • 34 cup pizza sauce (or tomato pasta sauce)
  • salt
  • fresh ground black pepper
  • 4 crusty rolls
  • 6 ounces thinly sliced mild provolone cheese or 6 ounces mozzarella cheese

Directions

    In a large skillet, heat oil over medium-high heat.

    Add mushrooms, green pepper, onion, garlic, basil, and hot pepper flakes; cook, stirring, for 5 minutes or until softened.

    Stir in beef and pizza sauce; cook until heated through.

    Remove from heat; season with salt and pepper to taste.

    Cut rolls along one side and open like a book; layer with cheese slices.

    Place on baking sheet under preheated broiler for 1 minute or until cheese melts.
