Beefy Spanish Rice

  • 1 lb ground beef, browned & drained
  • 1 12 cups white rice
  • 3 tablespoons butter
  • 12 cup chopped green pepper
  • 12 cup chopped onion
  • 2 cloves garlic, crushed
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 cup hot water
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 12 teaspoon black pepper
  • 34 cup grated cheddar cheese

Directions

    In a large skillet saute rice for 5 minutes or until golden; stirring constantly.

    Add ground beef, peppers, onion and garlic.

    Cook and stir 2-4 minutes or until vegetables are tender.

    Add tomatoes w/juice, water, chili powder, salt and pepper; mix well.

    Cover and simmer 20-25 minutes or until rice is tender.

    Sprinkle with cheese and serve.
