Beer, Ham & Cheese Bisque

Ingredients

  • 6 Parsnips, peeled & cut into 2 inch pieces
  • 6 Leeks, washed & cut into 2 inch pieces
  • 2 ribs Celery, cut into 1 inch pieces
  • 1 medium Onion, chopped
  • 2 clove Garlic, minced
  • 3 tbsp Bacon fat
  • 6 cup Ham stock
  • 1 1/2 tbsp Liquid Smoke, more or less per your taste
  • 1 can Beer (non-citrus) Chicken or Beef broth can be used as a substitute.
  • 1 Red Pepper flakes, to taste
  • 1 Salt & White Pepper, to taste
  • 1 cup Heavy cream
  • 16 oz Shredded VELVEETA Cheese (it melts creamy instead of oily)
  • 4 strips of Bacon, cooked crispy & crumbled
  • 2 tbsp Chives
  • 1 Sour cream, to taste (optional)

Directions

    Boil first 11 ingredients in a large stock pot.

    (Parsnips, Leeks, Celery, Onion, Garlic, Bacon Fat, Ham Stock, Beer, Red pepper flakes, salt, pepper & liquid smoke)

    Boil/simmer covered until all ingredients are VERY tender & broken down..

    Puree mixture in a food processor until smooth.

    Return to pot.

    Bring to a low simmer.

    Add Heavy Cream & mix with a whisk.

    Stir in shredded cheese & mix until cheese is melted on low temp.

    Be careful not to let bisque stick to pot!

    Place in serving bowls.

    Top each bowl with Bacon crumbles & Chives.

    (Optional)-Place a dollop of sour cream on the side of serving bowl if you wish.
