Ingredients
- 3/4 lb. shredded Cheddar cheese
- 3 oz. cream cheese
- 2 Tbsp. butter
- 1/3 c. lite beer
- 1 tsp. dry mustard
- 1/4 c. dried parsley
Directions

1Beat Cheddar cheese, cream cheese and butter in food processor or mixer until smooth.

2Gradually add beer and mustard. Refrigerate until stiff enough to be rolled into a ball, approximately 2 hours.

3(In the meantime, drink the rest of the beer.)

4Roll into a ball and place in the bowl.

5Cover and refrigerate until just before serving.

6Chop parsley very fine and roll cheese ball in parsley.

7Serve with crackers or French bread.
