Beet Pickles

  • 2 c. sugar
  • 1 1/2 tsp. salt
  • 3 1/2 c. vinegar
  • 1 1/2 c. water
  • 3 qt. small beets

Directions

    Cook beets, whole, with about 1/2 inch of top on beet, until tender and peel.

    Combine all ingredients except beets.

    Simmer 15 minutes.

    Pack beets into hot jars, leaving 1/2-inch head space. Pour boiling liquid over beets.

    Seal and process about 10 minutes in boiling water bath.

    You can use larger beets and slice. Canned beets, drained, can also be used.
